Dinny Vinegar
This fine red wine vinegar salutes A. Dinsmoor "Dinny" Webb, a former professor with UC Davis' famous Department of Viticulture and Enology. Identified by his tasteful collection of bow ties, and renowned for his research on wine and grapes, Dinny also enjoyed producing vinegar for fellow faculty members. To make this wine vinegar, we started with the same source Dinny used when he began making vinegar in the 1940s--premium Cabernet Sauvignon wine from UC Davis' Oakville Station vineyard in Napa. The vinegar is then created in a 150-year-old stone vinegar house by a local artisan, one of only two in the nation that uses the Orleans method. This unique wine-to-vinegar conversion process includes months of aging in French Oak barrels. Our Dinny Red Wine Vinegar is full-bodied with a crisp finish, and is a worthy partner to our award-winning UC Davis Olive Oil.
